Ingredients for 4 people:

500 g of turnip greens
1 clove of garlic
2 tablespoons of cedar pine nuts
80 g of 36 months grated Parmesan cheese
6 tablespoons of extra virgin olive oil
Salt and Pepper To Taste.

Preparation:

Wash the turnip greens thoroughly and remove the impurities. Then cut them coarsely and cook them in a pan with plenty of lightly salted water. Waiting for the cooking, then drain them, squeeze them and let them cool. Put a non-stick pan on the fire with a clove of garlic and two tablespoons of extra virgin olive oil.

Add the turnip greens to the pan and cook for about 10 minutes, stirring over low heat. Put everything in the mixer and blend by adding pine nuts, Parmesan cheese and oil until you get a delicious turnip greens pesto. You can keep the pesto, possibly leftover, for 3-4 days in an airtight container, provided it is well covered with oil.
